Baked Oatmeal (Chapter 6, December - Wintering)
1/2 cup oil
1 cup brown sugar
2 tsp baking powder, 1 tsp salt, 2 tsp cinnamon
1 cup orange juice
1 tsp vanilla
1 large apple (unpeeled) chopped fine
3 cups oatmeal (not instant!)
Mix all ingredients by hand in large bowl in the order given. Place in greased square 8 X 8 glass baking dish. Bake 375 degrees 45-55 minutes.
Test for doneness because heat distribution depends on the oven. You can add nuts and raisins to the batter or save to serve in bowls with milk.
Laid Back Ratatouille (Chapter 1, September - Falliing)
3-4 Tablespoons olive oil
1 small eggplant, chopped
2 yellow squash, sliced
2 zucchini, sliced
1 large onion, chopped
3-4 fresh tomatoes, chopped
Handful of fresh basil (or ground oregano - or combination of both!)
In deep dutch oven, sizzle eggplant in olive oil to soak up some of the oil, then add onions and squash. Cook 10 minutes. Add tomatoes and spices and simmer 25-30 minutes. Before serving, add 1/2 cup red wine.
* Serve over rice.
